Mirepoix USA, the leading online purveyor of gourmet foods is holding an exclusive five-course foie gras tasting, professionally paired with premium wines, on Saturday, November 15, 2014, in Reno, Nevada. In addition to the foie gras tasting dinner, Mirepoix USA will also be holding a silent auction to raise funds to support efforts to keep foie gras and other foods legal.
In late 2011, Mirepoix USA relocated from California to Nevada in response to the California “foie gras ban” enforced beginning July 1, 2012. Foie gras is approved by the FDA as a wholesome food product, and it is legal to sell and produce the gourmet food product in every state except California.
Mirepoix USA founder, Laurel Pine said, “There is an enormous amount of misinformation about foie gras world-wide, which, in my opinion, has led to resistance and controversy. We wish to promote and support food freedom, as well as freedom of expression. We don't strive to silence those who oppose foie gras, rather to invite open dialogue from all viewpoints with hopes that the facts about foie gras production are known and understood. We are all better served with dialogue that is balanced and not merely dominated by the single voice of PETA and associated groups.”
Mirepoix USA is holding a silent auction of fine food and restaurant gift certificates to raise funds in support of the company’s efforts towards food freedom. The auction will support the considerable time and resources needed to keep foie gras available to those who enjoy it. Mirepoix USA often collaborates with CHEFS, Coalition for Humane and Ethical Farming Standards, a trade organization comprised of chefs, culinary professionals, diners, and supporters of sustainable and humane farming standards.
The five-course foie gras tasting menu includes a beautiful pairing of artfully prepared small plates and premium wines. The first course will be Frozen Shaved Foie Gras with Burgundy Truffle and Black River Russian Caviar, followed by Foie Gras Torchon with Winter Fruit Salsa; Twice Baked Potato with Seared Foie Gras, Duck Bacon, and White Truffles; Crispy Salmon, with Seared Foie Gras, Beet Greens, Roasted Beets and Candied Red Chilies; and Foie Gras Ice Cream with 25-year-old Traditional Balsamic Vinegar from Reggio Emilia, Italy for dessert. All recipes were developed and will be prepared by Mirepoix USA founder, Laurel Pine.
